Types Of Middle Eastern Sweets
Middle Eastern sweets can be divided into three Main types: Pastries, cookies, and cakes. All these types of sweets are made from phyllo dough, Knafeh dough, or semolina dough, and most of them are filled with a variety of nuts.
Among the three types of Middle Eastern sweets, pastries, which are also called "assorted Baklava", are the most popular. Cookies come in second place and cakes in the third.
Assorted Baklava is a collection of pastries offered as dessert in most Arabic and Mediterranean courtiers. All of these pastries contain sugar syrup which give them a sweet taste, as well as a variety of nuts. They are made from two main types of dough: Phyllo dough and Knafeh dough. Both types of dough are made from flour and water.

Osh El Bulbul for example is made from Knafeh dough and has a dark brown color, but it is crunchy instead of being a chewy pastry like most other pastries made from Knafeh dough.
Some of these sweets are easier to prepare at home than others and are thus often homemade. In general, those pastries made from phyllo dough are much easier to prepare and bake at home than those made from Knafeh dough. That is the case because phyllo dough itself is much easier to prepare than Knafeh dough. Phyllo do is also easily found readymade in supermarkets and grocery store. Knafeh dough, on the other hand, needs special equipment to prepare it.
These Middle Eastern sweets can have a very long shelf like when premium ingredients are used.
Cookies
The most famous Middle Eastern cookies are Mamoul and Mamoul-Mad. They are both semolina cookies filled with pistachios, walnuts, or dates. These cookies are very popular because they are much healthier than most sugar cookies as they contain relatively less calories and contain an abundance of nuts or dates. That is due to the nature of the dough used.
Cakes
The most famous Middle Eastern cakes are Sfouf and Nammoura (also called Basbousa or Harissa). Unlike most other Middle Eastern sweets, these cakes are not abundant in nuts. They are made of semolina dough, just like the cookies. While Nammoura is topped with sugar syrup like all other Middle Eastern sweets, Sfouf is not.
